Thirsk-based rare and traditional breed pig farmers Taste Tradition have been presented with two prestigious gold awards in a national catering competition.
Their triumph came in the BPEX Foodservice Pork Product Of The Year competition 2012, which recognises and rewards quality pork products and dishes that can be found on menus in pubs, restaurants, schools and hotels.
Established by the Ashbridge family, who have farmed out of Cold Kirby for three generations, Taste Tradition picked up a gold award for their saddleback suckling pig loin stuffed with black pudding and apple.
It was also selected by judges as one of the top three products in the fresh pork cut category.
A further gold award was given for their sweet-cure gammon chop in the best cured product category.
Charles Ashbridge, who founded the company with his mother in 2004, said: “We are delighted we continue to do so well in what is a very competitive national event. “The competition is a chance to gain recognition for our range of pork products, which are often found on restaurant and fine-dining menus.
“There is real demand for high-quality, high-welfare pork and we strive to meet these needs.
“We choose selected rare breed pigs, which are outdoor reared; this combined with traditional farming and finishing methods, ensures our pork delivers superior flavour and exceptional eating quality.”
