WIPER and True, based in Bristol, are fairly new to the market but already they’re turning a few heads.
Not only are these homebrewers-gone-pro surprisingly open about their recipes (listing near complete information about each beer on the labels) but they’ve managed to balance their experimental tendencies with the refinement and balance required to create a drinkable and sophisticated range of beers.
This class is evident not only in their delicately poised beers, but also in their eye-catching, minimalist packaging, and their decision to forgo the recent trend to brand their products as ‘IPA’, ‘Gold’, and ‘Stout’ – giving their beers names that provide context and character before you start drinking.
Autumn Rye is a tangerine beer with pink blush highlights and a buoyant white head. The aroma is incredible, thanks in part to an experimental hop cultivar used in this brew: strawberry jam leaps out of the glass, sticky apricots, spearmint, and blackcurrants.
The flavour is sweet and full bodied; again the strawberry jam leads the way, filling the mouth with a delicate and smooth perfume which is rounded out with a blackberry sharpness.
An underlying burnt toffee and toasted almond character, backed by mint fudge and vanilla, contrast a gentle bitterness and coffee sharpness.
