HANNAH BRYAN is getting in the mood for Christmas
It’s beginning to look a lot like Christmas in my kitchen.
With the festive season well and truly upon us I thought it would be a good idea to have a trial run of potential Christmas recipes.
This recipe is a great way to liven up sprouts and add something different to your Christmas dinner this year.
The final dish was bursting with flavour thanks to the bacon lardons and sweetness of the raisins. The pine nuts complimented the crunch of the roasted sprouts and apple perfectly. This dish can be added to your Christmas dinner or is even great as a light lunch or tea because it’s packed full of flavour and is highly nutritious.
Festive sprouts with apple, pine nuts & raisins
You will need:
1kg Brussels sprouts
250g bacon lardons
3 cloves garlic
100g pine nuts
75g raisins
50g cranberries
Seasoning
1 cooking apple, cut into decent sized chunks
Oil for cooking
Method:
Start by pre-heating the oven to about 180 degrees and then chop the sprouts in half and arrange them on a baking tray.
Roughly chop the garlic and add the cranberries and chopped apple to the tray. Drizzle with olive oil and season before stirring to ensure the sprouts are coated.
Roast in the oven for about 25 minutes.
In a frying pan, add the pine nuts and bacon lardons and fry until almost crispy before adding them to the sprouts along with the raisins.
Give the dish a good stir before putting back into the oven for a further five minutes.
