A well-known North Yorkshire Frenchman hopes to bring his award-winning pastries to the centre of York.
Florian Poirot, who operated a top-rated patisserie in Talbot’s Yard, in England’s ‘Food Capital’ of Malton, wants to open a similar venture in Shambles.
The pastry chef and chocolatier has applied to City of York Council to erect new signs and stickers at 19 Shambles, which was previously used as a gift shop, and make minor internal changes inside, such as installing a kitchen sink and units.
The building dates from the early 17th Century and is Grade II* listed.

As the Press previously reported, Florian moved from France to York with his wife Celine almost ten years ago to work for Nestle as a senior confectioner.
While working for the confectionery giant, Florian made macarons and sold them at Malton’s monthly food market. He opened his shop in 2017.
Florian will also be selling them at the Malton Food Lovers Festival in October and at the York Food Festival in September.
City of York Council has yet to determine the application.
