The team at Spirit of Yorkshire have bottled a limited-edition whisky for the prestigious Whisky Show in London it says is it's "most exciting ever."

Filey Bay IPA Single Cask #731 is described as “fresh, fruity and complex with flavours of lemon meringue, cooked pears, boiled sweets and hops”, the whisky was bottled at 51.6% ABV.

Alongside The Whisky Exchange’s own-label bottlings, a feature of Whisky Show is a small selection of releases from partner distilleries and bottlers created exclusively for the event.

The Whisky Exchange’s own-label and exclusive releases product manager Chris Bolton said: “Whisky Show is all about giving distillers and producers the best possible platform to showcase the amazing work they’re doing.

The Whisky Exchange’s buying director Dawn Davies MW said: “Spirit of Yorkshire is a distillery unlike any other in the UK. They make whisky using barley from their own farm and brew beer at their own brewery Wold Top.

"This not only means that they can trace every drop of whisky back to a field of barley, but they also have beer to play with and casks to age it in. This exclusive bottling is matured in a cask that used to hold Wold Top Scarborough Fair IPA, giving it a huge fruity character - a must-try from a cult distillery.”

Joe Clark, whisky director at Spirit of Yorkshire Distillery said: “We’re very excited to have bottled this very special cask for such a renowned and world-class show."

“With a primary maturation in ex-Bourbon for four years followed by two years and two months in the ex-IPA casks, this whisky leans more heavily into the beer character than either our IPA Finish batch #1 or #2.

"Over time, the hop profile ebbed and flowed, rising and falling as the months and years ticked by in the cask, revealing a whisky with a rich flavour profile and very complex character."

Joe added: "This is the first single cask we have released from our very precious stocks of ex-IPA casks. Unless you have a farm, brewery and distillery you can’t create casks or a whisky quite like this.

"Without a doubt, it is one of the most exciting single casks we have bottled to date, putting our beer cask maturation into the spotlight.”

The Whisky Show is one of the biggest whisky shows in the world, with over 1,000 drams and other spirits available to sample, masterclasses, Dream Drams, cocktails and stage demos. A selected run of Filey Bay IPA Single Cask #731 was sold at the show, with the remainder selling out within minutes of launching on the Whisky Exchange’s website after the event.
