No pressure, shrugs Craig Straker, head chef at the York Marriott Hotel, faced with the daunting task of presenting the founders of Harry Ramsden's fish and chip restaurant empire with... a fish and chip supper.
In fact, Craig will be serving up no fewer than 40 of the traditional British meals to members of the Institute of Directors when they converge on the Tadcaster Road hotel on Monday, October 21, to hear speakers John Barnes, former chief executive of the Harry Ramsden empire, and his old marketing director, Richard Richardson.
But will this former senior sous chef at the Leeds Marriott, who for ten years also worked at top London hotels like the five-star Le Meridien Piccadilly and Regents Park Marriott, live up to the Harry Ramsden standards? No problem, says Craig who comes from two generations of professional Northumberland fishermen.
He has already put in his order for oversized fresh cod straight from the port at South Shields and promises "big chunky chips."
